The Menu: French Bread Pizza with Roasted Veggies

Yesterday was a great day! Delicious dinner and an outside, successful run. I couldn't ask for much more. 

I've been running inside on the treadmill at the gym since January. I had to stop for about a month in April because my IT Band was messed up. 

Now that we've moved, I no longer have a gym membership. That might change come winter with all the snow, we'll have to see. 

This was the first time I've run outside in close to a year. I was worried. I was worried that my pace would be terrible without a treadmill to tell me how fast to go. I'm on week 5 of the Couch to 5K program and just decided to go for it. 

It was hot, sweaty, and a struggle. But, in the end I was really happy with my two miles. 


It was a slow run but right in my usual zone. I am so grateful that I can run at all with no pain in my knee since I finished PT. I can train to get faster and that's all I need!


When I told my little brother (he's 8) about this meal, he rolled over on the ground and faked dead. Then, he opened his eyes and said, "Can we please have that when I come visit?"
Why yes we can. I plan on this becoming a part if the regular meal rotation for me! 

I was inspired by Budget Bytes Roasted Vegetable French Bread Pizza. (I'll post the link at the bottom of the page). Her blog is amazing!  I am always looking there for new, inexpensive ideas. She also has great suggestions for what basics to get in a new kitchen. 

I rarely change her recipes, but this one got a little pricey. The BF and I are really trying to keep our grocery bills as low as we can. We tend to ball out a little to hard at the grocery store. What can I say? We love ourselves some good eats. 

Here it is, the best French bread pizza I have ever had. 

Ingredients:
1 loaf French bread
1 cup mozzarella cheese, grated
1 large carrot, chopped
1 green pepper, chopped
1/2 red onion, chopped
1 small head broccoli, chopped
1 zucchini, chopped
1 yellow squash, chopped
2 cans fire roasted tomato
2 cloves garlic
Olive oil spray
2 tsp basil and oregano, each
1/2 tsp paprika
2 tsp brown sugar
Salt and pepper to taste

1. Preheat your oven to 400 degrees. 
2. Roast your veggies. Chop all those bad boys up, spray them with oil (I use my Misto), a toss them around with 1 teaspoon (or more) or basil, oregano, salt and pepper. You could also add some thyme. If I had it in my kitchen, I would have. You could even go garlic-crazy like me and add some here too. Put the on a baking sheet or in a glass pan. You want them in a single layer as much as possible. 
3. Keep them in for about 45 minutes. Stir them every 15 minutes. 
4. While those are in the oven start making your sauce.  You could buy some if you wanted to. Mince and sauté a clove of garlic in olive oil. Add the tomatoes, the rest of the spices, and the brown sugar. Salt and pepper to taste. Let it simmer while the veggies roast. 
5. Cut the bread the long way to create two long, flat pieces that will be your pizzas.
6. Spray the bread with olive oil and spread the rest of the minced garlic over that. Add your sauce, veggies, and cheese. I only assembled half of the loaf with half the toppings so that I could make the other half for lunch the next day. 
7. Pop that bad boy into the oven for about 10 minutes or until your cheese is melty goodness.  
8. Eat way more than you planned 😉

With an Adventure: Moving Part 2

I'll make a long story short here to finish up the moving story.  We drove back and forth (a two and a half hour drive one way) three more times. Brutal. 
The moving of our furniture was the worst. 
Here's the BF next to the packed truck. We were very lucky to get a partly furnished apartment and only needed to brig bedroom things. If we had had to bring everything we would have needed I rent a Uhaul truck. The last time we did that was a shitstorm. 

I ordered the smallest one they had (10 feet) because we have a small apartment's amount of things. The day before we were leaving, on my last day of work, I got a call from the company saying that the only size they had available was the a 24 foot truck. 

Here's a picture for reference. 

We were moving a bed, futon, dresser, table, 4 chairs, small bookshelf, and two end tables. In the "household mover."  I almost had a panic attack. Thank Buddha my mom was driving the truck. We had to lay everything flat on the floor so it wouldn't slide around and get ruined. I was so glad that was over. 

This time it went much more smoothly.

With an Adventure: Moving

Hello friends!

It's official...I really hate moving. Packing, unpacking, cleaning, losing things, breaking things. I can't stand it. I like to be in new places, but I don't like the process of getting there. 
The BF and I moved over the past three days. We are close enough to go back and forth. It had its benefits and drawbacks. I am very ready to not be in a car for a good long time. 

I'll update you all in the next couple of days between bouts of unpacking and organizing. Wish me luck! 

Day 1: 
We left the house with a car load of things. Almost all the boxes we had packed. Then we drove two and a half hours north to the town where Shane will be working so that he could meet with his boss for a while. 
I went and sat by the river and read for about 45 minutes. 
I was so glad to be in the sun, relaxing for a bit. Plus, I had a beautiful view. 

When the BF was done I picked him up and went back a half an hour south so that I could get some things done for my new job. 
Luckily I talked Shane into going to one of the bars I loved in college for lunch and a beer. 

Then we finally got to go to our new apartment, sign the lease, and move in with the first round of things.

We started to unpack, and I made some quick American Chop Suey which is one of the BF's favorite meals. 
It's so fast and easy to make. I usually just sauté some ground beef or turkey. Then I add some peppers and garlic. And just toss it all together with some tomato sauce and cooked pasta. 
Typically I would make my own sauce. But, since I was in the midst of moving and not have any spices, I just bought some Newman's Own Roasted Garlic pasta sauce. It was pretty good! 

It was a crazy first day of moving!

Starting Fresh

Hello you wide, wide blogging world!

I'm so excited to be getting into blogging.  I hope to give much to my readers and to find some yet unspecified, but surely amazing, things.  My interests vary widely and I have less than no idea of what I will be writing about or where this blog will take me.  All I know is that I have high hopes and big dreams for this little place.

So, without further ado, I figure I'll just jump right in and start writing about whatever ordinary things I will be writing about!

This summer has been pretty crazy.   The BF (Shane) and I are moving within the next week, are both starting new jobs, and have been traveling since the beginning of July.  Things are wild and I have been bad about getting to the gym.  And, worst of all, I can totally feel it.

Earlier in the month, Shane and I went to go hike up a local mountain and I completely failed.


It was terrible.  I never bail on our hikes.  Like, ever.  I felt so pathetisad (pathetic and sad).  It was a bad day.  This past week we tried again.  It was a challenge, but really, it was nothing in terms of what I know I can do.  It was steep but short.  The first time around I had it in my head that it was going to be a two hour hike up the mountain...it only took 45 minutes!!  If I had known that, I would NOT have given up.  At the top, we got this gorgeous view of our tiny New England town.



I was so glad to be at the top of that mountain.  I felt so silly knowing that I had given up the first time around when I totally could have done it.  I've just got to keep working out and I'll only get better.
